2 pounds Yukon Gold potatoes, washed and diced into medium cubes
1 cup whole milk
1/2 stick salted butter
1/2 cup sour cream
1/2 cup shredded white cheddar cheese
Kosher salt to taste
White pepper to taste
Green onions, sliced finely
