Spring. It’s finally here and it’s time to plan your vegetable garden. There are many vegetable crops that do well in our high-altitude gardens and potatoes are one. The potato is wonderfully delicious, packed full of nutrients and is a favorite with all ages.
The Colorado State University (CSU) San Luis Valley Research Center is constantly developing and evaluating superior varieties of potatoes for use by commercial growers and backyard gardeners. Each year, they provide each Colorado county Extension office four potato varieties for sale for a mere 50 cents per pound and this year’s varieties include the favorite Yukon Gold (yellow skin, white flesh), Sangre (red skin, white flesh), Purple Majesty (purple skin, purple flesh) and Mountain Rose (red skin, pink flesh).
