Fiber-rich foods and local agriculture to be highlighted at Archuleta Food Summit

Healthy Archuleta is inviting community members to the 2026 Archuleta Food Summit on April 18, where local food and community health will take center stage.

One focus of the event will be the importance of fiber-rich foods, such as vegetables, legumes and whole grains, which support digestion, heart health and disease prevention.

Many Americans consume less fiber than recommended, increasing risks for conditions such as heart disease and diabetes.

Locally grown foods, including peas and leafy greens, are excellent sources of fiber and nutrients that support gut and cardiovascular health. Some of these local foods will be featured in the food summit’s delicious farm-to-table lunch. Although early in the growing season, the lunch will feature local produce from greenhouses, grow domes and hydroponic production alongside local mushrooms and meat.

During the summit, participants will take part in an interactive simulation of the proposed Archuleta Community Food Hub and Food Hall to explore how local farms could connect with restaurants, markets and families.
